“Shake ‘n Bake” Chicken Coating Mix


With Both Baking & Frying Instructions (Southern Fried Chicken)


I think this is better than the stuff you buy from the store. It has much more flavor. It’s equally suited for a quick meal when you don’t have time or a full Sunday dinner.

There are directions here for heart-healthy chicken breasts or a full frying chicken, either baked without oil or Southern fried chicken (like KFC Original recipe Chicken)!


Coating Mix Pantry Pack

Ingredients
2 cups flour
4 teaspoons paprika (I love smoked paprika)
1 teaspoon salt
1 teaspoon pepper
1 teaspoon poultry seasoning (or chicken stock powder)
1 teaspoon oregano
1 teaspoon tarragon
1 teaspoon parsley
1 teaspoon chives
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon thyme
1/2 teaspoon celery salt

Directions

  1. In a bowl, add all ingredients. Mix until ingredients are thoroughly combined.
  2. Store in an airtight container in a cool, dark place (away from heat, light, AND humidity).

Shake ‘n Bake Chicken

Ingredients
1 Pantry Pack Coating Mix
1 whole chicken, cut into pieces (about 2-1/2 pounds) or 2 pounds chicken breasts

Directions for Baking

  1. Preheat oven to 400°F/200°C.
  2. Moisten bone-in chicken pieces or boneless skinless chicken breasts with water.
  3. Shake chicken, 1 or 2 pieces at a time, in shaker bag with coating mix. Discard bag and any remaining coating mix.
  4. Bake in ungreased or foil-lined 15x10x1-inch pan until done (minimum internal temperature of 165°F/75°C when tested with meat thermometer).
    Bone-in: 45 min.
    Boneless: 20 min.

NOTE: Do not cover or turn chicken while baking.


KFC Original Recipe Chicken

Ingredients
1 Pantry Pack Coating Mix
1 whole chicken, cut into pieces (about 2-1/2 pounds) or 2 pounds chicken breasts
3 beaten eggs
4 tablespoons peanut oil

Directions

  1. Place coating mix in a gallon-sized, clean plastic bag. Coat bone-in chicken pieces or boneless skinless chicken breasts first with the beaten egg, then with the flour mixture in the bag. Make sure you coat each piece completely with the flour. Discard bag and any remaining coating mix.
  2. Heat the oil in a skillet. Brown the chicken in oil slowly, uncovered.
  3. Once browned, cover the skillet and keeping frying on a very gentle heat until the chicken is fully cooked. Place on paper towels to drain out the excess oil.
