“Helper” Hacks—5 Meal-in-a-Jar Healthy Alternatives


~~~Including Full Instructions for Pantry Packs using Dehydrated Foods~~~

Today we are going to make one-pot meals — Tuna Noodle Skillet, Skillet Hamburger Stroganoff, Chicken Broccoli Alfredo Skillet, Taco Bar Skillet, and Mexican Chicken & Rice. I designed these meals to replace the famous Hamburger/Tuna/Chicken ready meals found in the grocery stores. They are just as convenient, less expensive, and a whole lot more flavorful! I hope your family enjoys them as much as mine does. The SOS Mix recipe is listed here: SOS Mix.

Note for Dehydrated foods: These meals were designed with the meat added as either a canned product or fresh. You, of course, can also add your dried meats to your Pantry Packs. This allows you to have even more product at the ready if you wish.

Tuna Noodle Skillet

Yield: 6 servings

Ingredients

Meal-Tuna Noodle1/3 cup SOS Mix
3 cups water
2 tablespoons butter
1/2 cup onion, chopped
3/4 cup fresh mushrooms, sliced*
2 cups uncooked egg noodles
2 (5 ounce) cans tuna
1 cup frozen peas, thawed and drained
1 cup cheese, grated
Salt & pepper to taste

Directions

  1. In a deep skillet, melt butter and add onions and mushrooms. Sauté until tender.
  2. In a bowl, whisk SOS Mix and water until well blended.
  3. Add SOS mixture, noodles, and peas together. Bring to a boil, reduce heat and simmer covered for 15-20 minutes or until noodles are tender.
  4. Add tuna and cheese. Heat through. Season with salt and pepper. Serve immediately.

Notes

*You can use 1 (4 ounce) can mushrooms, drained, if fresh mushrooms are not available.

Dehydrated Ingredients Variation

You can prepare these in batches in pint jars or bags. A great way to keep “meals” at-the-ready for your cooking is to make a quadruple batch and bag each “meal”. When you need a “meal”, pull out a bag or jar and you are good to go!

To Prepare a Pantry Pack:

1/3 cup SOS Mix
2 cups uncooked egg noodles
1/4 cup dried peas
1/4 cup dried onion, chopped
1/4 cup dried mushrooms, sliced

  1. You will need 3 containers for the pantry packet.
  2. In a quart Mason jar, combine the egg noodles and peas.
  3. In one small Ziploc bag, add the dried onion and mushrooms. Push out all the air to seal closed.
  4. In another small Ziploc bag, add the SOS mix. Push out all the air to seal closed.
  5. Fold Ziploc bags into the jar and vacuum seal.
  6. Store in a cool, dry pantry or cupboard.

To prepare meal:

Ingredients

Tuna Noodle Pantry Pack
4 cups water, divided
2 tablespoons butter
2 (5 ounce) cans tuna
1 cup cheese, grated
Salt & pepper to taste

Directions

  1. Add mushrooms and onion to a bowl with 1 cup of room temperature water. Cover and allow to stand until water is absorbed. Soaking time will vary depending on the size and thickness of the food. Most will be rehydrated in 20 to 30 minutes. Drain off water, reserving liquid.
  2. Add 3 cups of cold water to the reserved liquid. In a bowl, whisk SOS Mix and water until well blended.
  3. In a deep skillet, melt butter and add onions and mushrooms. Sauté until tender.
  4. Add SOS mixture, noodles, and peas together. Bring to a boil, reduce heat and simmer covered for 15-20 minutes or until noodles are tender.
  5. Add tuna and cheese. Heat through. Season with salt and pepper. Serve immediately.

Skillet Hamburger Stroganoff

Yield: 6 servings

Ingredients

Meal-Hamburger Stroganoff2 tablespoons-butter
1/2-cup onion, thinly sliced
2 cups fresh mushrooms, sliced
1 pound ground beef or turkey
3 cups water
1/3 cup SOS Mix
2 cups uncooked egg noodles
Salt & pepper to taste
1 cup sour cream

Directions

  1. In a deep skillet, melt butter and add onions and mushrooms. Sauté until tender. Set aside in a bowl.
  2. Brown meat and drain off the fat.
  3. In a small bowl, whisk the SOS Mix and water together until well blended.
  4. Add to the skillet along with the uncooked egg noodles, meat, and sautéed vegetables and stir. Bring to boil, reduce heat and simmer covered for 15-20 minutes or until noodles are tender.
  5. Season with salt and pepper. Top with sour cream.

Notes

*You can use 2 (4 ounce) can mushrooms, drained, if fresh mushrooms are not available.

4-1/2 cups water, divided
2 tablespoons butter
1 pound ground beef or turkey
Salt & pepper to taste
1 cup sour cream

Directions

  1. Add mushrooms and onion to a bowl with 1-1/2 cups of room temperature water. Cover and allow to stand until water is absorbed. Soaking time will vary depending on the size and thickness of the food. Most will be rehydrated in 20 to 30 minutes. Drain off water, reserving liquid.
  2. Add enough water to the reserved liquid to make 3 cups. In a bowl, whisk SOS Mix and water until well blended.
  3. In a deep skillet, melt butter and add onions and mushrooms. Sauté until tender.
  4. Brown meat and drain off the fat.

Chicken Broccoli Alfredo Skillet

Yield: 6 servings

Ingredients

Meal-Chicken Broccoli Alfredo3 cups water
1/3 cup SOS Mix
2 tablespoons butter
1/2 cup onion, chopped
1-1/2 cups fettuccine noodles, uncooked
1 cup fresh or frozen broccoli, steamed al dente
1 pound boneless chicken breast, cooked (2 breast halves)
1/4 cup Parmesan cheese, grated
Salt and pepper to taste

Directions

  1. In a small bowl, whisk the SOS Mix and water together until well blended.
  2. In a deep skillet, melt butter and add onions. Sauté until tender.
  3. Add SOS-water Mix and fettuccine noodles. Bring to a boil, cook until thick and noodles are almost tender.
  4. Add broccoli and cooked chicken. Heat thoroughly until noodles are tender.
  5. Remove from the heat and slowly add in Parmesan cheese, stirring with each addition. Season with salt and pepper.
  6. Serve with additional Parmesan cheese.

Taco Bar Skillet

Yield: 6 servings

Ingredients

Meal-Taco Bar2 tablespoons olive oil
3/4 cup onion, finely chopped
1-1/2 tablespoons minced garlic
1-1/2 tablespoons ground cumin
1 pound ground beef, sausage, or turkey (or a combination)
1/2 teaspoon ground chipotle pepper
1/2 teaspoon salt
1/3 cup SOS Mix
1-1/4 cups beef broth
2 tablespoons tomato paste
6 to 8 taco shells or warmed soft corn or flour tortillas, as desired

Suggested garnishes:
Grated Monterey Jack or Cheddar, for garnish
Diced tomatoes, for garnish
Minced jalapenos, for garnish
Sour cream, for garnish
Shredded iceberg lettuce, for garnish
Guacamole, for garnish
Salsa, for garnish
Chopped red onion, for garnish

Directions

  1. In a deep skillet over medium heat, add the olive oil and onions. Sauté until tender. Add the garlic and cumin to the pan and continue to sauté until fragrant, about 1 minute.
  2. Add the beef to the pan and cook, breaking the pieces up as they cook, until the meat is browned, about 8 to 10 minutes. Season with the chipotle pepper and salt.
  3. In a small bowl, whisk the SOS Mix and beef broth together until well blended.
  4. Add the SOS-beef broth mix and tomato paste to the pan and bring to a simmer. Cook the meat, stirring occasionally until most of the liquid has evaporated, about 20 minutes.
  5. Remove from the heat and serve with the garnishes for guests to assemble their tacos to their liking.

Variation

Cut or break up taco shells or tortillas into 1” pieces and add in Step #4. Bring to a boil, reduce heat and simmer covered for 15-20 minutes or until tortillas are tender. Top with 1/4 cup cheese and allow to melt. Serve immediately.

  2. In a small Ziploc bag, add the dried onion. Push out all the air to seal closed.
  3. In a pint Mason jar, combine remaining ingredients.
  4. Fold Ziploc bag into the jar and vacuum seal.
  5. Store in a cool, dry pantry or cupboard.

2 cups water, divided
2 tablespoons olive oil
1 pound ground beef, sausage, or turkey (or a combination)
6 to 8 taco shells or warmed soft corn or flour tortillas, as desired

Suggested garnishes:
Grated Monterey Jack or Cheddar, for garnish
Diced tomatoes, for garnish
Minced jalapenos, for garnish
Sour cream, for garnish
Shredded iceberg lettuce, for garnish
Guacamole, for garnish
Salsa, recipe follows, for garnish

  5. Add the SOS mixture to the pan and bring to a simmer. Cook the meat, stirring occasionally until most of the liquid has evaporated, about 20 minutes.

1/2 cup chopped onion
1 cup whole-kernel corn
3/4 cup uncooked white rice
4 skinless, boneless chicken breast halves
1/2 cup cheddar cheese, shredded

Directions

  1. Whisk SOS Mix and water until well blended.
  2. Add salsa, onion, corn, and rice. Pour in 2 quart shallow baking dish. Place chicken on rice mixture.
  3. Cover and bake at 350°F for 1 hour or until chicken is done and rice is tender. Sprinkle with cheese and serve.

  1. Add corn and onion to a bowl with 1-3/4 cups of boiling water. Cover and allow to stand until water is absorbed. Soaking time will vary depending on the size and thickness of the food. Drain off water, reserving liquid.
  2. Add cold water to the reserved liquid to equal 1-3/4 cups. In a large bowl, whisk SOS Mix and water until well blended.
  3. Add salsa, onion, corn, and rice to SOS mixture. Pour in 2 quart shallow baking dish. Place chicken on rice mixture.
  4. Cover and bake at 350°F for 1 hour or until chicken is done and rice is tender. Sprinkle with cheese and serve.
