Crispy Coleslaw Mix Recipe


This mix is so versatile. Not only can you make great coleslaw, but this mix can also be used for stir fry, stuffing egg rolls, soups, and casseroles. I love to fry it up with sliced onion and bacon to make a tasty side dish. And this mix is much more flavorful and cheaper than pre-mixed bagged coleslaw.


Crispy Coleslaw Mix

Yield: 9-12 cups

Ingredients

4 pounds green cabbage, shredded
1 pound red cabbage, shredded
3 carrots, shredded
1 small green pepper, diced
1 medium red pepper, diced
1 medium white onion, diced
2 tablespoons pickling salt

Directions

  1. To shred cabbages, use a mandolin slicer to achieve the correct thickness, about 1mm. The carrots can be run through the food processor with the coarse shred blade.
  2. Combine vegetables. Add the salt. Let stand 1 hour. Drain water from vegetables. Rinse twice and drain well.
  3. Dehydrate vegetable mixture at 125°F/50°C for 8 to 12 hours or until crispy dry. Allow to cool.
  4. Store coleslaw mix in air-tight container(s) away from heat, humidity, and light.

Note:

To prepare dehydrated coleslaw mix, one serving is approximately 1/3 cup of dehydrated vegetables (compacted). Add an equal volume of cold water. Allow to rehydrate for at least 30 minutes.

Dressing Variations

KFC Coleslaw Dressing

1/2 cup mayonnaise
1/3 cup granulated sugar
1/4 cup milk
1/4 cup buttermilk
2 tablespoon lemon juice
1 tablespoon white vinegar
salt & pepper to taste

Mix the mayo, sugar, milk, buttermilk, lemon juice, and vinegar. Pour mixture over the rehydrated coleslaw (see notes). Stir well to combine. Add salt and pepper to taste. Stir again. Cover & refrigerate for at least 2 hours.

Southern Coleslaw Dressing

1/2 cup apple cider vinegar
1/4 cup sugar
1/4 cup vegetable oil
2 Tbsp. Dijon mustard
2 tsp. dry mustard
1 tsp. celery seeds
1 tsp. kosher salt
1/2 tsp. freshly ground black pepper

Whisk ingredients in a saucepan until sugar dissolves; bring to a boil over medium-high heat. Allow to cool. Pour over rehydrated coleslaw (see notes); toss to coat. Serve immediately.

Memphis Coleslaw Dressing

1 Tbsp. light brown sugar
2 tsp. kosher salt
1 tsp. paprika
1/2 tsp. dry mustard
1/2 tsp. dried oregano
1/2 tsp. freshly ground black pepper
1/4 tsp. granulated garlic
1/4 tsp. ground coriander
1/4 tsp. onion powder
1/2 cup mayonnaise
1/4 cup apple cider vinegar

Whisk together first 9 ingredients in a bowl. Whisk in mayonnaise and apple cider vinegar until sugar dissolves. Pour over rehydrated coleslaw (see notes). Let stand 1 hour before serving, tossing occasionally.
