Barbecue Spice Rub

Makes about 1 cup
This simple rub gives you the flavor of a tomato-based barbecue in a rub!  The sweet, spicy taste is just perfect for grilling, roasting, or dehydrated foods.

Rub it on everything from chicken to pork to burgers to steak to beef jerky. Flavor your vegetable chips, roasted or dehydrated chickpeas, or popcorn with it.

Ingredients
1/4 cup brown sugar
1/4 cup tomato powder
1/4 cup smoked paprika (1 ounce/ 27 grams)
1 tablespoon dried grated lemon peel
······or lemon powder
1 tablespoon garlic powder
1 tablespoon onion powder
1/2 tablespoon ground black pepper
1/2 tablespoon salt
1/2 tablespoon chili powder
1/2 teaspoon cayenne pepper (optional)
  Directions

  1. Mix ingredients thoroughly in a bowl.
  2. Store in an air-tight container or keep in the freezer in a sealable plastic bag. This fits well in a 1/2-pint Mason jar.
  3. Rub over poultry or meat before grilling, baking or broiling.

To make Beef Jerky:  Trim all the fat, gristle, and silver skin from the meat. Slice the meat into thin strips 1/8″ to 3/8″ thick, against the grain. Set the strips down in a large or sealable plastic bag and pour the dry rub over the pieces, shaking to coat. Allow to stand 1 hour in refrigerator. Shake off excess rub before drying.

Deep South Herb Dry Rub

MAKES: 1/3 cup,
enough for 2-3 pounds (0.9-1.4 kg) of meat.
This flavorful blend is equally good on chicken, beef and pork. Slice the leftover meat for sandwiches.

Throwing beef slices into a bag with this herbal blend will give you a delicious, zesty jerky that many of my friends enjoy.

Ingredients
1 tablespoon dried basil, crushed
1 tablespoon dried thyme, crushed
1 tablespoon dried rosemary, crushed
1 tablespoon dark brown sugar
2 teaspoons salt (I like kosher salt)
1-1/2 teaspoons dried oregano
1-1/2 teaspoons dried marjoram
1 teaspoon dried garlic granules
1 teaspoon smoked paprika
1/4 teaspoon pepper corns
1/2 teaspoon dried onion flakes
  Directions

  1. In a small bowl, combine all ingredients. Store in a covered container for up to 6 months.
  2. When ready to use, grind into a powder with a mini chopper or mortar and pestle.
  3. Rub over poultry or meat before grilling, baking or broiling.

Sweet Italian Sausage Seasoning Blend

Makes enough to flavor 3 pounds of ground meat
To make your sausage this will be enough for 3 pounds ground pork, ground turkey, and/or ground lean hamburger,

You can use 93% lean ground beef or ground venison to make “sausage-flavored” jerky with this seasoning blend as well.

You can even flavor one of the Vegan non-meat brands like Lightlife’s Gimme Lean vegan ground beef.

Ingredients
3 tablespoons red wine vinegar
1 tablespoon salt
1 tablespoon freshly cracked black pepper
1-1/4 tablespoons dried parsley
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon dried basil
2 teaspoons paprika
1 teaspoon crushed red pepper flakes,
······or to taste to make it spicier
3/4 teaspoon ground fennel seed
1/4 teaspoon brown sugar
1/8 teaspoon dried oregano
1/8 teaspoon dried thyme
  Directions

  1. Place the meat and red wine vinegar in a mixing bowl. Sprinkle with remaining ingredients. Knead until flecks of spice are evenly distributed through the meat.
  2. Divide the meat into thirds, and form into 3 LOGS; wrap each in plastic wrap. Place wrapped meat in refrigerator for at least 12 hours before casing, cooking, or dehydrating.
  3. To prepare casings, stuff, twisting into desired lengths.
  4. Cut apart or leave in a string and refrigerate until ready to cook, no more than two days. To store longer, freeze in Ziploc bags with as much air squeezed out as possible.
  5. For easy patties, pull log out of freezer and thaw. You can use a finely serrated knife to cut right through wrapping into 1/4 to 1/2 inch slices, or use the same as you would ground chuck as meat product.
  6. To make jerky, load the ground beef into a jerky gun or press out and load on trays for dehydration.

This dry mix keeps up to 6 months, so any time you yearn for chicken or beef gravy, you can stir up a helping. You’ll love its just-made flavor and convenience.

For a Gluten-free option, use sweet rice flour instead of all-purpose flour.

You are welcome to add herbs and spices to your own taste. This gravy mix is easy, versatile and much less expensive than those little packets from the stores.

Ingredients
1 cup all-purpose flour or sweet rice flour
1/4 cup homemade or your brand beef bouillon
······granules (I use Herb-Ox® brand)
1 teaspoon pepper
1 teaspoon mushroom powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon ground thyme
1/4 teaspoon celery powder
  Directions

To make the Dry Mix: Combine flour, bouillon, and the seasonings in a bowl and whisk together. Store in an airtight container in a cool dry place for up to 6 months. Shake well before using.

To prepare gravy: In a small saucepan, melt 2-1/2 tablespoons butter or pan drippings. Add 2-1/2 tablespoons gravy mix. Cook and stir until lightly browned, about 1 minute. Whisk in 1 cup cold water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Makes 1 cup.

Ingredients
1 cup all-purpose flour or sweet rice flour
1/2 cup + 2 tablespoons nutritional yeast
1/4 cup vegetable broth powder,
······low sodium or homemade
1 tablespoon onion powder
1-1/2 teaspoons garlic powder
1-1/2 teaspoons black pepper
1/2 teaspoon mustard powder
  Directions

To make the Dry Mix: Combine flour, bouillon, and the seasonings in a bowl and whisk together. Store in an airtight container in a cool dry place for up to 6 months. Shake well before using.

  2. Toast 1/4 cup Vegan Gravy Dry Mix over low heat until aromatic.
  3. Slowly add 1 cup of cold water, whisking to remove any lumps.
  4. Add 1 tablespoon low sodium Soy Sauce or Bragg’s Amino Acids and stir to combine.
  5. Simmer on med-low heat until bubbly and thickened. Makes 1 cup.

Easy Vegetable Broth Powder

Easy Vegetable Broth Powder

Makes about 1/4 cup or 16 (1 teaspoon) servings
You can use this mix not only to make vegetable broth, but also as an all-purpose seasoning.  I love it on vegetables, meats, in soups and sauces –basically anything savory — even on popcorn!

To make 1 cup of broth, combine 1 cup boiling water with 1 teaspoon broth powder.

1 teaspoon broth powder = 1 bouillon cube.

Ingredients
6 tablespoons dried, chopped onion
3 tablespoon dried, chopped carrots
3 tablespoon dried, chopped celery
3 tablespoon dried kale or spinach flakes
3 tablespoon dried, chopped mushroom
1 tablespoon dried parsley flakes
2 teaspoons dried thyme
2 teaspoons dried marjoram
1 teaspoon dried lemon zest or lemon powder
1/2 bay leaf, crumbled
1 teaspoon salt (optional)
  Directions

  1. Mix all ingredients together and grind into a powder with a mortar and pestle, coffee grinder, or high-powered blender like a Vitamix, Blendtec, or NutriBullet.
  2. Be sure to seal the lid well if using grinder or blender. Make sure the dust has settled inside the grinder before removing the lid when finished powdering.
  3. If you still have pieces within the powder, sift these out and re-grind.
  4. Store it in a jar with a tight-fitting lid for up to 6 months.

If you keep this blend out of heat, light, and away from dampness, it will last 6 months-1 year.
