5 Sauces from SOS Mix (Gluten-Free)


~~~Better than Store-Bought, Gluten-Free, and EASY!~~~

These recipes are simple to make and can replace all those sauce packets and jars you have in your pantry now.  You’ll save money, control ingredients, and avoid expensive “fast foods” when you start making your own favorite convenience foods.

White sauces are an important building tool for so many recipes. The basic white sauce is the starting point for making other sauces, like Cheddar Cheese sauce, Alfredo sauce, and several other variations. All of these sauces lend well to using the SOS Mix as the starter. I use a white sauce flavored with wine for my Chicken or Turkey Pot Pie. Many Stroganoffs and the sauce for the Americanized version of Swedish Meatballs, which are all usually made in a similar fashion (just seasoned a bit differently), are based on white sauce. Usually they are made a bit richer with the addition of cream cheese or sour cream. Creamed Pearl Onions, Creamed Peas, and Creamed Spinach all use the basic white sauce too.

WhisksBéchamel is a basic white sauce and one of the five mother sauces of classical cuisine. You can season the basic white sauce and serve it as-is. Or try making it with bacon or sausage fat for an amazing white gravy. The SOS Mix makes a wonderful, creamy, gluten-free, low carb sauce that looks and tastes like a rich sauce you would spend much more for.

Don’t let the fancy French name fool you. White sauce is just as easy to make as all the other recipes we have made this week and only take a few minutes to whip together.. In my kitchen, I do not make any of these recipes without my trusty whisk. A whisk is a kitchen tool using for blending, whipping, incorporating air and eliminating lumps in food. Whisks are cheap, and available even at the Dollar Tree. Buy one of these handy tools; you won’t regret it.

Basic White Sauce

Yield: 1-1/2 to 2 cups depending on thickness

Ingredients

Basic White SauceThick white sauce:
4 tablespoons butter*
1/3 cup SOS Mix
1-1/4 cup water, milk, or chicken broth

Medium white sauce:
3 Tablespoons butter*
1/4 cup SOS Mix
1-1/4 cup water, milk, or chicken broth

Thin white sauce:
2 tablespoons butter*
2 tablespoons SOS Mix
1-1/4 cup water, milk, or chicken broth

Directions

  1. Use a medium sauce pan over low heat and add butter.
  2. Sprinkle in SOS Mix while whisking; continue whisking for 1 minute.
  3. Continue whisking while pouring in milk or chicken broth.
  4. Whisk constantly while cooking until sauce gets thick and bubbly.
  5. Add seasonings to taste.**

Notes

  • *If using bacon or sausage fat, replace the butter in recipe in the same measurement.
  • **This basic sauce can fit many different cuisines with the addition of seasonings. Just by adding Cajun seasoning, Chili powder blend, Chinese five spice, curry powder, garam masala, herbes de Provence, ras el hanout, or Za’atar, you can take this simple sauce to a whole new level of international cooking! Start with 1/2 teaspoon of your herb/spice blend and adjust to taste.

To Prepare a Pantry Pack

Ingredients

SOS Mix in amount specified above
1/2, 3/4, or 1 tablespoon bouillon granules according to thickness-(optional)

Directions

  1. You will need 2 containers for the pantry packet.
  2. In a Mason jar, combine vegetables, meat, and/or rice/noodles/ potatoes.
  3. In a Ziploc bag, add the SOS Mix and bouillon if using. Push out all the air to seal closed. Fold this bag into the jar and vacuum seal.
  4. Store in a cool, dry pantry or cupboard.

To Prepare Sauce

Ingredients

Butter in amount specified in recipe
Basic White Sauce Pantry Pack
Boiling water in amount specified in recipe

Directions

You can prepare the sauce with the original directions using the contents of your Ziploc bag.

OR put contents of Ziploc bag in a bowl or container. Add boiling water and whisk until thoroughly blended. Allow to stand and thicken (about 15 minutes).

Cheese Sauce

Yield: 2 cups

Ingredients

1/3 cup SOS Mix
1-1/4 cup water, milk, or broth
1 cup shredded cheese of choice*

Directions

  1. Cheese SauceMake the SOS mix by heating dry mix and liquid of choice over medium heat and whisking until bubbly and lump free.
  2. Turn off the heat and add cheese in very small amounts, whisking each bit until melted into the sauce and then adding the next bit. If the white sauce cools too much during this process, turn the heat under the pan back on to very low and gently warm back up. Too much cheese at once, added while the white sauce is too hot, may separate the cheese and make the white sauce grainy, giving it an unappealing texture. (It will likely still taste good, but that grainy texture is awful.)
  3. Use your cheese sauce in your dish or recipe as you would normally.

Notes

*Cheese combinations can be used:

  • 1/2 sharp cheddar and 1/2 other type of cheddar
  • 1/2 cheddar and 1/2 Monterrey jack
  • 1/4 cheddar and 3/4 Swiss makes a nice mellow, smoky flavor
  • 1/2 Cheddar and 1/2 Jalapeno cheese spices things up!

Use cheese sauce for macaroni & cheese and au gratin potatoes. Pour it over broccoli, cauliflower, a baked potato, or pasta with veggies. You could pour it on eggs and toast. Top fries with cheese sauce, or add chopped chicken or steak to it with sour cream and guacamole. Try it over enchiladas, One of our favorites is French bread with pizza sauce or tomato paste spread over it, layered with pepperoni or cooked sausage, and cheese sauce over it. Bake this for a 10 minutes, Put it in a tortilla with scrambled eggs cooked sausage or bacon and make a breakfast burrito. Let your imagination direct you; try it on anything.

Freeze Dried Cheese option. Add 1/4 cup of cheese to your Ziploc bag and prepare as specified above.

Alfredo Sauce*

Yield: 2 cups

Ingredients

1/3 cup SOS Mix
1-1/4 cup water, milk, or broth
1/2 cup Parmesan cheese, grated (fresh or canned)**

Directions

  1. Alfredo Sauce2Make the SOS Mix by heating dry mix and liquid of choice over medium heat and whisking until bubbly and lump free.
  2. Turn off the heat and add cheese in very small amounts, whisking each bit until melted into the sauce and then adding the next bit. If the white sauce cools too much during this process, turn the heat under the pan back on to very low and gently warm back up. Too much cheese at once, added while the white sauce is too hot, may separate the cheese and make the white sauce grainy, giving it an unappealing texture. (It will likely still taste good, but that grainy texture is awful.)
  3. Serve and use just as your recipe or dish calls for.

Notes

*The original Fettuccini Alfredo sauce, first made in Rome, called for less than a 1/4 teaspoon (or a pinch) of nutmeg and used freshly grated parmigiano.

**Other flavor choices:

  • Freshly grated Parmigiano-Reggiano
  • The addition of 1/2 cup sour cream or cream cheese
  • An Italian cheese blend of shredded cheeses
  • 3/8 cup grated parmesan cheese and 1/8 cup mozzarella cheese
  • 3/8 cup freshly shredded Parmesan cheese and 1/8 cup shredded fontina cheese
  • 1/4 cup Gruyère with 1/4 cup Parmesan (this gives you the classic Mornay Sauce)
  • Add 1-1/2 tablespoons minced garlic
  • Try 1 teaspoon of lemon powder to add zest to the sauce

Use Alfredo sauce for Fettuccini Alfredo, chicken and seafood pastas, over vegetables, Upgrade your basic au gratin potatoes or macaroni & cheese by adding in some savory Alfredo sauce. Instead of marinara sauce, try Alfredo sauce over tortellini or raviolis or make white sauce lasagna or pizza. Make a meal out of your baked potato by skipping the sour cream and loading it up with mushrooms, red peppers, green peas, and Alfredo sauce.

Soubise (Onion) Sauce

Yield: 2 cups

The Soubise Sauce is a classic cream sauce for vegetables made by sautéing onions and then puréeing them before adding to a basic Béchamel sauce.

Ingredients

3/4 cup onions, chopped
2 tablespoons unsalted butter
1/3 cup SOS Mix
1-1/4 cup water, milk, or broth

Directions

  1. Soubise SauceIn a heavy-bottomed saucepan, melt the butter and cook the onions until soft and translucent, but don’t let them turn brown.
  2. Transfer cooked onions toa food processor. Purée briefly and then return them to the pot.
  3. Whisk the SOS Mix and liquid into the puréed onions and bring the sauce to a simmer.

Notes

For a simple variation on the classic soubise sauce, add some tomato purée to the sauce just before serving. Add 1/2 cup tomato purée at the end of cooking and heat through.

Use soubise sauce as an accompaniment for vegetables, eggs, or chicken.

  3. In a Ziploc bag, add the SOS Mix, onion powder, and bouillon if using. Push out all the air to seal closed. Fold this bag into the jar and vacuum seal.
  4. Store in a cool, dry pantry or cupboard.

Onion Sauce Pantry Pack
2 tablespoons unsalted butter
1-1/4 cup boiling water

Directions

You can prepare the sauce with the original directions using the contents of your Ziploc bag.

OR put contents of Ziploc bag in a bowl or container. Add boiling water and whisk until thoroughly blended. Add cheese. Allow to stand and thicken (about 15 minutes).

Vodka Sauce

Yield: Serves 4

Ingredients

2 tablespoons butter
1-1/2 cups finely chopped onion
4 teaspoons garlic, minced
1/4 teaspoon red pepper flakes
1 (28-ounce) can crushed tomatoes
1/4 cup SOS Mix
1/4 cup vodka
1/4 cup milk
1 teaspoon lemon zest or lemon powder

Directions

  1. Vodka SauceMelt butter in a large, thick-bottomed pot on medium high heat. Add the onion and sauté 5 to 7 minutes, until lightly browned.
  2. Lower the heat to medium, add the garlic and red pepper flakes and cook a minute more.
  3. Add the crushed tomatoes to the onions. Stir in the vodka, SOS Mix, milk, and lemon zest. Increase heat to bring to a simmer, then lower the heat to maintain a simmer.
  4. After the sauce has simmered for 5 minutes, taste for salt and add salt to taste (you’ll likely need about 1 teaspoon).

Use vodka sauce as an accompaniment for vegetables or eggs. This is the sauce used in the famous Italian dish “Penne alla Vodka” and is delicious with both seafood and chicken.

Directions

  1. You will need 2 containers for the pantry packet.
  2. In a Mason jar, combine vegetables, meat, and/or rice/noodles/ potatoes.
  3. In a Ziploc bag, add the SOS Mix and remaining ingredients. Push out all the air to seal closed. Fold this bag into the jar and vacuum seal.
  4. Store in a cool, dry pantry or cupboard.

Vodka Sauce Pantry Pack
2 tablespoons butter
1/4 cup vodka
1/4 cup milk
3 cups water

Directions

You can prepare the sauce with the original directions using the contents of your Ziploc bag.

OR put contents of Ziploc bag in a bowl or container. Add heated liquids and whisk until thoroughly blended. Allow to stand and thicken (about 15 minutes).
